Toasted Dried Anchovies

I am currently hungry while writing this. Crying face I know it’s a bad habit not taking breakfast but I have no choice when I prefer to sleep rather than eat a sumptuous meal (But nobody prepares my brekky that’s why).

Anyhow, last week I cooked this meal. It’s very popular in provinces here in the Philippines. It usually served during breakfast (but I ate this for dinner).

We call it here dilis or anchovies.

I am proud how rich and creative our meals here. Being a developing country where people still live in rural areas, we are very resourceful. We can almost eat everything except for human of course.

So here’s how to do this.

  1. In a hot frying pan pour oil.
  2. Once hot (enough to fry) add dried anchovies
  3. Wait until 70% toasted
  4. Add sugar
  5. Wait until the sugar to caramelized. DO NOT BURN the sugar.
  6. Stir.
  7. DONE.

Very easy side dish. Winking smile 

Add sliced tomatoes with a pinch of salt. The anchovies are very crispy, it’s sweet and salty at the same time.
