I am currently hungry while writing this. I know it’s a bad habit not taking breakfast but I have no choice when I prefer to sleep rather than eat a sumptuous meal (But nobody prepares my brekky that’s why).
Anyhow, last week I cooked this meal. It’s very popular in provinces here in the Philippines. It usually served during breakfast (but I ate this for dinner).
We call it here dilis or anchovies.
I am proud how rich and creative our meals here. Being a developing country where people still live in rural areas, we are very resourceful. We can almost eat everything except for human of course.
So here’s how to do this.
- In a hot frying pan pour oil.
- Once hot (enough to fry) add dried anchovies
- Wait until 70% toasted
- Add sugar
- Wait until the sugar to caramelized. DO NOT BURN the sugar.
- Stir.
- DONE.
Very easy side dish.
Add sliced tomatoes with a pinch of salt. The anchovies are very crispy, it’s sweet and salty at the same time.
